Founded in 1975 by Chantal Lescure and Xavier Machard de Gramont, Domaine Chantal Lescure is a family estate that today manages a 19-hectare vineyard. It extends north on the slopes of Dijon and south towards Meursault. This vineyard has been entirely certified organic since 2006. The grapes are carefully selected. A pneumatic pressing of the whole grapes is carried out, followed by a light racking of the must, without the addition of sulfur. Fermentation takes place in 228-liter barrels, without stirring the lees. We use very little new wood. It is a long fermentation (4 to 8 months), with natural yeasts.
