Wine production is a process that lasts all year round and the harvest is nothing more than the result of the efforts and attention of the community's young people to the vineyards throughout the \u003cstrong\u003evegetative cycle\u003c\/strong\u003e. The grapes are harvested in mid-October and, as soon as they are picked, they are immediately taken to the cellar to be pressed and, after destemming, softly crushed. The must is transferred into steel tanks for a \u003cstrong\u003eslow\u003c\/strong\u003e \u003cstrong\u003efermentation\u003c\/strong\u003e with periodic pumping over and a \u003cstrong\u003elong\u003c\/strong\u003e \u003cstrong\u003emaceration\u003c\/strong\u003e on the skins. The wine is then left to rest and age for 18 months in traditional 30-hectoliter Slavonian oak barrels. Before being sold, it ages for a further year in the bottle.
