On the palate, it is rich and elegant, with a \u003cstrong\u003elong-lasting flavour\u003c\/strong\u003e.\u003c\/p\u003e\u003ch3\u003eWhere it comes from\u003c\/h3\u003e\u003cp\u003eThis wine is born in the heart of Valpolicella, from vineyards situated at around four hundred and fifty metres above sea level. The soils originate from the alteration of \u003cstrong\u003ecalcareous-fossil formations\u003c\/strong\u003e, such as Biancone marble and Scaglia Rossa, which give the wine aromatic clarity and a solid structure. The name Casa Lupo recalls the history of the area, once characterised by dense woodlands inhabited by wolves. Production is based on \u003cstrong\u003ecollaboration with local winegrowers\u003c\/strong\u003e, ensuring that every stage takes place strictly within the \u003cstrong\u003earea of origin\u003c\/strong\u003e.\u003c\/p\u003e\u003ch3\u003eHow it is produced\u003c\/h3\u003e\u003cp\u003eThe process begins with a \u003cstrong\u003emanual harvest\u003c\/strong\u003e carried out in several stages at the end of September, in order to select only the bunches that have reached perfect ripeness. The grapes are then subjected to the traditional \u003cstrong\u003edrying process in the fruit loft\u003c\/strong\u003e until the winter months, a crucial step to concentrate the aromas and components of the fruit.
