The winery extends over a thousand hectares of pristine nature, featuring typical Mediterranean vegetation and vast \u003cb\u003evineyards\u003c\/b\u003e, from which the Poggio Miniera Val di Cornia selection is produced, made from a \u003cb\u003e100% Sangiovese\u003c\/b\u003e blend. The \u003cb\u003eharvest\u003c\/b\u003e takes place around mid-September: the best bunches are hand-picked, according to tradition, and placed in crates. The \u003cb\u003efermentation\u003c\/b\u003e phase takes place in steel tanks, where the grapes are left to macerate for approximately 20 days at a controlled temperature ranging from 26°C to 28°C, with daily pumping over and delestage. Once the alcoholic fermentation phase is complete, 48 hours of \u003cb\u003epost-fermentation maceration\u003c\/b\u003e follows, which takes place at a temperature of 29°C. This is followed by \u003cb\u003eracking\u003c\/b\u003e. Immediately after this process, while fine lees can still be found in the wine, it is transferred to French oak barriques to allow malolactic fermentation to take place. For the next 6 months, the wines undergo weekly batonnage. The Val Di Cornia production process ends with \u003cb\u003eaging\u003c\/b\u003e, which lasts for 12 months.
