Given specific climatic conditions, the estate's vineyards are home to calcareous-clayey, ferrous, or pebbly soils. The \u003cb\u003eBrunello di Montalcino DOCG from Tenuta di Collosorbo\u003c\/b\u003e is obtained from a careful selection of Sangiovese grapes grown in the best vineyards, all trained using the spurred cordon system. Harvesting is carried out strictly by hand in small baskets, as was the custom decades ago. The \u003cb\u003eselection\u003c\/b\u003e is rapid, consisting of at least two steps. Following delicate destemming, the grapes are fermented at a controlled temperature, while the use of continuous pumping over during the vinification process helps create an elegant \u003cb\u003eBrunello di Montalcino DOCG\u003c\/b\u003e.
