On the palate, \u003cstrong\u003ethe Chardonnay\u003c\/strong\u003e is dry, fresh and smooth, distinguished by a pronounced \u003cstrong\u003emineral character\u003c\/strong\u003e and excellent savouriness. Its structure makes it perfect for accompanying vegetable flans, omelettes, white and fatty fish, medium-aged cheeses or flavourful dishes such as pork with apples.\u003c\/p\u003e\u003ch3\u003eWhere it comes from\u003c\/h3\u003e\u003cp\u003eThe grapes are grown in Thuvex, in the municipality of Saint-Christophe, from \u003cstrong\u003ehigh-altitude vineyards\u003c\/strong\u003e situated at 800 metres above sea level with a north-south exposure. The alpine climate encourages regular ripening, while the \u003cstrong\u003esandy and stony soil\u003c\/strong\u003e, rich in rocky fragments, gives the wine tension and energy.
