The vineyards, trained using the Guyot and bush-vine (alberello) systems at an altitude of 220 metres, are home to \u003cstrong\u003ethirty-five-year-old vines\u003c\/strong\u003e. The terrain consists of \u003cstrong\u003emedium-textured soils\u003c\/strong\u003e with sub-Apennine sands of a calcareous nature. The grapes are harvested during the first ten days of October.\u003c\/p\u003e\u003ch3\u003eHow it is produced\u003c\/h3\u003e\u003cp\u003eVinification begins in concrete vats, where \u003cstrong\u003efermentation with indigenous yeasts\u003c\/strong\u003e occurs spontaneously. The maturation process involves a six-month rest in concrete and, subsequently, an ageing of fourteen months in \u003cstrong\u003eAustrian oak casks\u003c\/strong\u003e for a portion of the wine.
