Here, \u003cstrong\u003eold vines\u003c\/strong\u003e of seventy years reside, cultivated according to the historic and distinctive \u003cstrong\u003eMaggiorina system\u003c\/strong\u003e. The project began in 1998, reclaiming the holdings of a historic local winery to highlight native varieties. The high altitude, combined with the \u003cstrong\u003elow yield per hectare\u003c\/strong\u003e, ensures the harvest of bunches rich in substance, translating the deepest expression of the local terroir into the glass.\u003c\/p\u003e\u003ch3\u003eHow it is produced\u003c\/h3\u003e\u003cp\u003eAfter the harvest, \u003cstrong\u003efermentation and maceration\u003c\/strong\u003e on the skins take place for eight days in open wooden vats, accompanied by constant manual punching down to extract colour and aromas. Maturation continues in \u003cstrong\u003eSlavonian oak barrels\u003c\/strong\u003e and smaller barrels, some new and some second passage, ensuring stability and complexity.
