The parcels, mainly south and east-facing at altitudes between 250 and 280 metres, benefit from morning mists that mitigate seasonal heat, encouraging optimal phenolic ripeness that preserves the grapes' natural acidic backbone.
How it is produced
The production of this Chardonnay follows a meticulous process aimed at enhancing structure and aromatic range. In the cellar, vinification begins with de-stemming and a gentle pressing of the grapes. The subsequent alcoholic fermentation takes place entirely in French oak barrels, some of which are first-fill, using a mixed process that integrates selected yeasts with spontaneous fermentation conducted by indigenous yeasts. Once the fermentation phase is complete, the wine undergoes a period of ageing on the lees for approximately 9-10 months in the same barrels. During this period, the regular stirring of the fine lees imparts greater creaminess, volume, and profound structural complexity to the wine, defining its definitive stylistic character.
