Description

What type of wine it is

Bottega Vinai Marzemino by Cavit is a still red wine made from Marzemino grapes, an authentic expression of the Trentino appellation. This wine stands out for its aromatic profile dominated by notes of ripe cherry and sweet violet, accompanied by a pleasant freshness and elegant spicy and liquorice notes. On the palate, it is harmonious, round and well-balanced, thanks to a moderate acidity and smooth tannins. The vinification and subsequent ageing in steel enhance the fragrance of the fruit, making it ideal for accompanying savoury starters, structured pasta dishes and roasted white meats.

Where it comes from

The Marzemino grapes used for this wine come from Vallagarina, located in Trentino along the banks of the River Adige, between the territories of Volano, Isera and Rovereto. The climate in the area is sub-continental, characterised by cold, snowy winters and hot, breezy summers with cool nights, optimal conditions that favour the aromatic development of the clusters. The foothill soils are brown and of medium depth, originating from the mineralisation of volcanic basalt rocks and rich in clays, particularly montmorillonite. This specific area boasts a deep historical connection with the variety, so much so that it is even celebrated in Wolfgang Amadeus Mozart's famous 'Don Giovanni'.

How it is produced

The creation of this wine begins with a meticulous hand-harvest, aimed at selecting only the clusters that have reached perfect ripeness. The red wine vinification involves one week of maceration on the skins, carried out in stainless steel tanks to extract colour and aromas while preserving the typical varietal freshness. After fermentation, the wine matures for six months in stainless steel, ensuring the maximum expression of fruit purity and structural stability. A further period of four months' resting in the bottle follows before the product is ready for tasting.

History and curiosities

The Marzemino from the Bottega Vinai range celebrates a historic grape variety deeply rooted in the picturesque terrains of Vallagarina, right along the flourishing slopes lapped by the River Adige. The intimate and centuries-old link between this noble variety and its territory of origin is so distinguished that it was even immortalised in Wolfgang Amadeus Mozart’s famous opera "Don Giovanni", which exalted its magnificence. The authenticity and the grand oenological tradition of this wine were then honoured at the prestigious ENOTecnico FEM competition.

Cavit is a company deeply rooted in the region to which it belongs: Trentino. A small area in the north-east of Italy where the vine, olive tree and Mediterranean-type vegetation live side by side with spruces and larches of the Alpine flora. A land of ancient traditions and culture, where the presence of man, with his villages, castles and cultivated terraces blends in harmoniously with the majestic Alpine landscapes.

The image that best represents Cavit, a large co-operative composed of a large number of small wineries, is that of the vine that produces healthy grapes only if the roots and the other parts of the plant all perform their roles properly.

Created in 1950 to meet the needs of the winegrowers in the area to offer the very best quality and market their wines in a modern way, today Cavit represents over 4,500 winegrowers who are members of 11 cellars and 65% of the wine production in Trentino (around 5,700 ha). Cavit harvests, examines and selects its raw materials from the best produce of the cooperative member cellars, which undergoes strict controls at every stage: from refining to bottling.

Cavit today is one of the major companies in the wine business, operating successfully at national and international level. The headquarters in Ravina, where the production and logistics facilities are also located, house the Wine Cellar, Sparkling Wine Cellar and Wine Shop. Cavit also owns Maso Toresella, used for corporate entertaining, on Lake Toblino.
