Domaine d'Elise's Petit Chablis is a still white wine produced in Burgundy using exclusively Chardonnay grapes. This French appellation is distinguished by a dry and tense sensory profile, characterised by a dynamic freshness and a distinct minerality. On the palate, it is savoury and vibrant, while the aromatic profile offers elegant citrus and floral notes, enriched by hints of flint. Vinification in stainless steel containers allows the aromatic integrity of the grapes to be kept intact, defining a harmonious style that clearly introduces the peculiarities of its territory of origin.
Where it comes from
This wine originates in northern France, within the Burgundy region, more precisely in the Petit-Chablis area. In this geographical area, Chardonnay finds the optimal conditions to express an unmistakable and very precise character. The particular geological conformation of the soil plays a fundamental role in the development of the wine's profile, conferring a crystalline aromatic purity and a marked typical minerality. This strong territorial identity enhances the natural qualities of the grape variety, delivering a sip that faithfully and objectively reflects the peculiarities of the Burgundian terroir.
How it is produced
The production process focuses on preserving primary aromas through meticulous vinification in stainless steel that follows local protocols. The total absence of ageing in wood represents a precise technical choice, aimed at maintaining a dry style and making the most of the wine's savoury structure. After the maturation phase in steel, the wine develops significant potential for evolution in the bottle, estimated at between five and ten years. It is ideal when paired with seafood, shellfish, lean fish, and refined selections of cheeses.

This is the northernmost area of Burgundy, with vineyards grown almost exclusively in Chardonnay that generate dry white wines renowned for their purity and minerality.
The colder climate than the classic Burgundy produces wines with more acidity and less fruity flavors than the Chardonnay of the Côte d'Or, with those notes of "pierre à fusil", and just metallic, which make them as recognizable as pleasant.
Compared to white wines from the heart of Burgundy, Chablis is almost never vinified and aged in wood. Steel in vinification is preferred and the choice of partially or completely wood refining is granted to the individual producer.
The AOC Chablis since 1938 did not include the petit Chablis, which entered then in January 1944. All Chablis vineyards fall into four denominations with different classification levels: only 7 grand Cru are located and all located on a single hill near the town of Chablis. Read more
