The Conegliano Valdobbiadene Rive di Guia Clorofilla Extra Brut by Gabe is a white sparkling wine made from Glera grapes, an authentic expression of Prosecco Superiore. Produced using the Charmat Method, it features a bright straw yellow colour with greenish highlights and a fine, persistent perlage. On the nose, it expresses hints of green apple, pear and stone fruit, interwoven with delicate floral nuances. The palate is strictly dry, characterised by a pronounced acidity and a lively savoury vein that accompanies the palate towards a deep and elegant mineral finish.
Origin
The grapes are grown on the steep slopes of the Rive di Guia, in the heart of Conegliano Valdobbiadene. The vineyards, situated at an altitude of 260 metres with south and south-west exposure, benefit from optimal conditions for ripening. The roots reach into deep, clayey soils, composed of sand and rock, low in limestone and tending to be acidic. This geological composition promotes natural water retention, ensuring the nourishment of the vines. The terroir defines the structure of the sparkling wine, giving it a clear mineral character.
How it is produced
After harvesting, the bunches undergo soft pressing to extract only the free-run must. Following static decantation, selected yeasts trigger fermentation at controlled temperatures, preserving the purity of the aromas. Ageing on the fine lees for at least three months enhances the body and taste persistence. The subsequent secondary fermentation takes place in an autoclave for approximately thirty to forty days, a step aimed at creating refined effervescence and ensuring a stable taste profile over time.
