What type of wine it is
Gabe's Fior di Sale Brut is a sparkling wine produced using the Charmat method from Glera grapes, an authentic expression of Conegliano Valdobbiadene Prosecco Superiore, which presents with a straw-yellow hue and a fine and creamy perlage. On the nose, it offers clear floral aromas of rose and acacia, intertwined with fruity notes of green apple, peach and citrus. The palate is distinguished by a lively freshness, accompanied by a marked mineral character that leads to a finish with elegant saline notes. This peculiar savouriness makes it an ideal companion for enhancing sushi and shellfish, as well as delicate seafood starters and soft cheeses.
Where it comes from
The grapes grow in the historical heart of the denomination, specifically in San Michele di Feletto, in Veneto, a hilly area recognised as a UNESCO World Heritage site. The vineyards are located between one hundred and one hundred and fifty metres in altitude, benefiting from a favourable south and south-west exposure that ensures optimal aromatic development of the clusters. The flavour profile, typically savoury, derives from the clay-limestone soils, characterised by the presence of yellow-blue marl formations. To respect the peculiarities of the Rive and maintain yields in balance with the territory, the Glera vines are trained according to the double arched cane system.
How it is produced
The creation of this Gabe sparkling wine begins towards the end of September with the harvest, followed by soft pressing of the bunches. After an initial static clarification, fermentation takes place at a controlled temperature. The sparkling process occurs in autoclaves, following the Charmat method, with secondary fermentation lasting approximately thirty or forty days. Finally, the sparkling wine undergoes careful ageing on the fine lees for at least three months. This calibrated rest enriches the wine's structure, defining its tactile softness and aromatic elegance.
