Description
What type of wine is it
The Palai Müller-Thurgau from Pojer e Sandri is a still white wine that interprets the character of the Müller-Thurgau grape variety with extreme precision. An authentic expression of Trentino under the Vigneti delle Dolomiti Typical Geographical Indication, this semi-aromatic wine is distinguished by a crisp, taut, and clear flavour profile, supported by a pleasant and continuous savoury vein. The olfactory profile is broad and focused, evoking hints of lemon verbena, peach, and citrus, masterfully integrated with subtle mineral nuances. The production process employs the technique of hyper-reduction in the press, carried out in the total absence of oxygen through the use of nitrogen—a fundamental step to keep the variety's most delicate aromatic compounds intact.
Where it comes from
The grapes grow in the renowned Palai area, located above the village of Faedo, in the heart of the Alpine territory of the Vigneti delle Dolomiti. The vineyards are located at an altitude between 550 and 750 metres above sea level, benefiting from a south-east exposure and the constant ventilation of the Ora del Garda, a wind that actively contributes to defining the sensory profile of the clusters. The soils vary in depth and are characterised by a silty-limestone matrix resting on a complex substrate of marly conglomerate, sandstone, siltstone, and dolomite. This specific mountain pedoclimatic context proves ideal for enhancing the clarity and natural aromatic precision of the Müller-Thurgau grape variety.
How it is produced
The production process adopts a rigorous approach focused on oxygen control to protect the fragile primary aromas and natural antioxidants of the must. Processing takes place entirely in a press saturated with nitrogen, allowing the juice to be extracted in a protected environment and preserving the most volatile olfactory components.
History and interesting facts
Founded in 1975, Pojer e Sandri is a pioneer winery of Trentino natural wines. Its signature wine, an excellent Müller-Thurgau, originates in the prestigious Palai vineyard in Faedo, a prime terroir constantly ventilated by the Ora del Garda wind. To preserve the delicate aromas of the grapes intact, the company has patented an innovative hyper-reduction vinification technique. This special pressing in the absence of oxygen, with nitrogen recovery, drastically reduces the use of sulphites, resulting in a white wine of extraordinary expressive purity, awarded 91 points by Vinous.

Faedo 1998: We are already starting to show our thirst for innovation: we are among the first at a national level to market Chardonnay, which until then was practically unknown.
Faedo 2002: We patent the reduction and press vinification with nitrogen recovery, which drastically reduces the use of sulphites. We then begin to wash the grapes through the grape jacuzzi.
The arrival of Marianna, Matteo, Fiamma, Elisa and Federico has brought further life and energy to this dream in which passion and innovation are the keystone.
Faedo 2013: The Zero Infinito project is born: Zero chemical treatments in the countryside, Zero sulphur dioxide, Zero commercial yeasts, Zero clarifying agents, Zero filtrations, Zero antioxidants. Read more
