Description

What kind of wine it is

Cavallotto's Langhe Nebbiolo is an organic red wine with a broad and intense aromatic profile. On the palate, it is enveloping, supported by a pronounced acidity that ensures a remarkable capacity for ageing. The bouquet reveals rich fruity notes of cherry and raspberry, accompanied by floral hints of rose and nuances of undergrowth. This Piedmontese red boasts a robust structure that makes it ideal paired with cured meats, grilled red meats, mature cheeses and even chocolate, with a suggestion to decant for about an hour before serving.

Where it comes from

This wine is produced in Piedmont, in the heart of the Langhe, by the Cavallotto winery. The grapes come from the youngest vineyards located in historically prestigious crus such as Bricco Boschis, Codana, Vignolo and Pernanno. The origin from these specific subzones gives the wine typical aromas of the area and a well-defined identity. The connection to its homeland emerges in the pure expression of Nebbiolo, faithfully reflecting the characteristics of the Piedmontese soils renowned for producing great structured reds.

How it is produced

The process involves total destemming of the grapes and a traditional fermentation in horizontal tanks, spontaneously started by indigenous yeasts. The semi-submerged cap maceration lasts from 18 to 30 days, encouraging the extraction of aromatic components. In spring, malolactic fermentation takes place in cement tanks. The process concludes with maturation in Slavonian oak barrels for a period between 15 and 24 months, followed by a further six months of bottle ageing to stabilise the sensory profile.

At the gates of Castiglione Falletto, in the heart of the Barolo Zone, on the slopes of the Bricco Boschis, one finds the Cavallotto Winery, which lies on 25 hectares of land. Since 1928, the Cavallotto family has owned the estate Tenuta Bricco Boschis. In 1946, they were the first cultivators in Castiglione Falletto to vinify all of their estate’s fruit. In 1948 they released the first bottling of their own BAROLO wine, with the label and registered trademark of Cavallotto.

Today the children of Olivio – Laura, Giuseppe and Alfio, the 4th generation working the family farm – continue to exclusively vinify the grapes produced in their estate vineyards into DOC and DOCG wines: Barolo, Dolcetto d’Alba, Barbera d’Alba, Langhe Nebbiolo, Langhe Freisa, Langhe "Grign" made from Grignolino grapes, Langhe Chardonnay and "Pinner" made from Pinot Nero grapes.
