What type of wine it is
The San Simone Metodo Classico Zero Dosage Cuvée Blanc de Blancs Riserva is a Quality Sparkling Wine from Friuli with a dry and rigorous character, in which pure Chardonnay is the protagonist. The absence of residual sugars enhances its fine perlage and creamy texture, offering an olfactory profile where white flowers, hazelnut, apple and banana stand out. On the palate, the freshness is supported by a vibrant savouriness, with a crisp and persistent finish that makes it perfect for accompanying raw seafood.
Where it comes from
The grapes come from the western part of Friuli-Venezia Giulia, between the municipalities of Pasiano and Porcia. Here, the Guyot-trained vineyards guarantee low yields to encourage aromatic concentration. The roots delve into a clay-sandy and limestone soil, a key element in giving the wine its typical freshness. To preserve acidity and aromatic cleanliness, a manual harvest is carried out in the third week of August, carefully selecting only the best bunches.
How it is produced
Production begins with a soft pressing aimed at extracting only the free-run juice. After maturation in steel and the creation of the blend, the wine undergoes second fermentation in the bottle following the rigorous standards of the Traditional Method. The prolonged ageing on the lees at a controlled temperature provides complexity and structure. The riddling and disgorgement phases take place without the addition of dosage, followed by a period of resting in the bottle necessary to reach the optimal gustatory balance.

Created to celebrate the San Simone centenary, this prestigious sparkling wine is the authentic expression of Friulian Chardonnay. The grapes, carefully selected between Pasiano and Porcia, are processed according to the rigorous Classic Method, resting on the lees for 36 months. This patient wait and the total absence of sugar dosage enhance its vibrant Pas Dosé soul. After a further three months of bottle ageing, the wine reaches a refined creaminess that pays a noble tribute to the extraordinary oenological vocation of the territory.

Later on handed over to our parents, Gino and Liviana convinced that to grow and improve we must always be open to change, which gave birth to a new production project: San Simone. An adventure that started from the historical Brisotto cellars, in Prata and later shifted to the new premises in Porcia, where the company accelerated its pace on the road to quality. This project aims to handle with care even a minimum detail, from the vineyard to the bottle.
