Sancerre Les Denisottes by Claude Riffault is a still white wine with a vibrant character, capable of expressing the characteristics of Sauvignon Blanc at their best. Produced in the Loire Valley in the Sancerre appellation with fermentation in vats and barrels, it is distinguished by a taut and rigorous style. The aromatic bouquet blends fruity notes of lime, pineapple and passion fruit with subtle spicy hints. On the palate, the tasting experience is guided by a distinct mineral edge and vibrant freshness with notable persistence, making it ideal for pairing with lean fish, sushi and cheeses.

Where it comes from

The grapes come from Sury-en-Vaux, in the renowned Sancerre district. The vines, cultivated according to biodynamic principles and trained using the Guyot system, are between thirty-six and forty-five years old. This mature vineyard heritage, with a south-east exposure, promotes optimal ripening of the bunches. Agronomic management aims to preserve soil vitality through ploughing, grazing and controlled ground cover. This ecosystem ensures an authentic expression of the terroir, which translates into a palate marked by distinct minerality.

How it is produced

The oenological process begins with a rigorous manual harvest followed by careful sorting, to ensure that perfectly intact grapes enter the winery. A long and gentle pneumatic pressing follows to obtain musts of great purity. Alcoholic fermentation takes place by dividing the batch between vats and barrels, a technical choice that gives volume and depth without overpowering the aromatic purity. The winemaking process concludes with nine months of ageing, during which the wine develops its structure, ensuring a deep, fresh palate with promising longevity.

Vine cultivation is essential for obtaining fine and precise wines. As careful winegrowers, our role is to maintain the best possible balance between soil and plant according to the climate. The company's 13.5-hectare vineyard consists of 10.5 hectares of Sauvignon Blanc and 3 hectares of Pinot Noir in about 6 locations north of Sancerre.

The soil is ploughed and grazed. A vegetal cover, controlled between the rows, preserves the flora and activates soil life. The work of pruning, sprouting and trellising is rigorous.

This technique makes it possible to regulate production and aerate the vegetation and the grapes to achieve perfect ripeness and health. After manual harvesting, the sorting guarantees the respect and integrity of the grapes until pressing (White and Rosé) or in the vat (Red). Thus, vinification and ageing take place in a simple but precise manner.
