Where it comes from
This wine originates in Castellania, Piedmont, among the hills of the Colli Tortonesi. The vineyards, cultivated using organic farming, grow on a soil of calcareous marls, an essential geological matrix for infusing the glass with a clear sapid character. The favourable hilly climate ensures excellent quality of the Timorasso clusters. The name is a tribute to grandfather Fausto, a symbol of the winery's deep family bond with the territory and the desire to enhance its most authentic identity.
How it is produced
The production process begins with a manual harvest in the morning, followed by soft pressing of the grapes and cold settling. Fermentation takes place slowly at a controlled temperature; malolactic fermentation is avoided to preserve natural acidic tension. Maturation involves ageing on the noble lees in steel tanks for approximately ten months, with careful bâtonnage. A further rest in the bottle completes the production cycle, harmonising the components to deliver a white with a marked propensity for ageing.

Gli incontri con gli anziani del paese e l’amore per questa terra faranno scoccare la scintilla.
La superficie vitata è di pochi ettari, quelli di una piccola realtà familiare, e consente la coltivazione diretta delle uve puntando essenzialmente alla qualità. Il legame con la tradizione ha determinato la scelta dei vitigni per dare importanza all’unicità dei vini.
Il Timorasso, con la sua storia radicata in queste terre a partire dal medioevo, è la varietà d’uva a bacca bianca che più rappresenta quest’angolo di Piemonte. La Barbera, indiscussa regina tra le uve a bacca nera, è da sempre presente nel Tortonese. I vini sono la sintesi tra moderne tecniche di vinificazione e la cura e la competenza che solo chi ama e da sempre conosce queste vigne può dare.
La produzione si può definire "artigianale" e si aggira intorno alle 25 mila bottiglie l’anno.
Questo permette di seguire direttamente e con estrema cura ogni fase del lavoro di cantina, per ottenere vini che esprimono la personalità dell’uomo e la forza della terra.
