Where it comes from
The origin of this wine lies in Châtillon-sur-Marne, a famous territory nestled in the picturesque Vallée de la Marne. The area benefits from a semi-continental climate with clear oceanic influences, offering optimal conditions for a balanced ripening of the grapes. The soil, with a clay-limestone composition, is characterised by marls and chalky sediments typical of the river's right bank, capable of giving the wine a distinct mineral imprint. In this area historically renowned for black grape varieties, the cultivation of Chardonnay for this specific plot represents a distinctive and highly suited peculiarity.
How it is produced
Production begins with a rigorous manual harvest, followed by a traditional soft pressing. Alcoholic fermentation takes place entirely in oak barrels through the use of indigenous yeasts, allowing the must to develop complex aromas. The process involves natural cold stabilisation, avoiding any fining or filtration before bottling (tirage). The subsequent secondary fermentation in the bottle, according to the strict rules of the Traditional Method, is followed by resting for over forty months on the lees, which significantly enriches the final aromatic structure before the final disgorgement.

The Chemin des Plants wine project was created to showcase a specific and isolated plot dedicated to Chardonnay, a very curious fact as it is located in a territory historically famous for the Meunier grape variety. This authentic limited and numbered edition rarity expertly combines vinification in wood with minimal oenological intervention in the cellar.

They deserve to be told. Modeled over the centuries by 10 generations of winemakers, Maison Cazé-Thibaut has seen the birth of men and women, all devoted to their land and their profession in the beautiful valley of the Marne.
Roger Cazé was the first to market bottles of Champagne. Fine winemaker, his fame was such that he practiced for the surrounding villages of winemakers and Champagne Cazé he founded in 1953.
In the Cazé house, the works succeed one another, complement each other but never contradict each other. Today, Fabien continues this work of passion to create precise and elegant wines in which the notion of terroir is obviously essential. Read more
