Description
What kind of wine it is
The Champagne Grand Cru Blanc de Blancs Extra Brut by Bruno Paillard is a rigorous wine, created to express the maximum purity of Chardonnay. Produced according to the rules of the Traditional Method, it belongs to the prestigious category of Champagne. This wine stands out for its dynamic and voluminous profile, supported by a distinct chalky minerality and elegant hints of white-fleshed fruit. Structured and complex, it reveals a dry character and vibrant freshness, offering a long and persistent finish with fascinating saline and iodised nuances.
Where it comes from
This Blanc de Blancs originates in the renowned Côte des Blancs, a sub-region of Champagne particularly suited to the cultivation of Chardonnay. The wine's character is deeply shaped by the specifics of this terroir, particularly the chalk-rich soils. This strong calcareous matrix transfers a clear minerality and an unmistakable dry imprint into the flavour profile. The selection of grapes exclusively from vineyards classified as Grand Cru and Premier Cru ensures an aromatic precision that faithfully reflects the identity of the Reims landscape and the region.
How it is produced
Production begins with grapes from only the first pressing, part of which is vinified in small oak barrels. The process follows the Demi Mousse technique, with a reduced amount of sugar before the second fermentation in the bottle, aimed at obtaining an extremely fine perlage with a delicate pressure. The maturation involves a very long ageing on the lees for over seven years, during which complex evolutionary notes develop. After disgorgement, a minimum rest of twenty-four months completes the structure, preserving the sharp profile of the Extra Brut dosage.
History and Fascinating Facts
Born from Bruno Paillard's desire to forge a wine of absolute purity, this 2015 vintage combines mastery and art. The label features an original theme interpreted by the artist Jeff Kowatch. His creation revives the historic Demi Mousse technique, which uses less sugar for a gentle pressure of four and a half atmospheres, ensuring an extremely fine effervescence. This artisanal meticulousness gives life to a limited edition of sixteen thousand bottles, widely celebrated with ninety-three points from James Suckling for its unparalleled expressive purity.
