Cielo d’Ulisse by Podere Le Ripi is an artisanal Brunello di Montalcino red wine with a controlled and guaranteed designation of origin, obtained from Sangiovese grapes cultivated according to biodynamic principles. Produced in a vegan version and unfiltered, it offers clear scents of red fruits, hints of undergrowth and delicate spicy notes. On the palate, it is structured, supported by fine and elegant tannins and excellent freshness. If aerated for an hour before serving, it pairs perfectly with grilled meats, game and mature cheeses.

Where it comes from

This Brunello di Montalcino is born in the vineyards of the Tuscan municipality of the same name, where the vines sink their roots into unique schist and limestone soils. This composition gives the wine a precise texture and solid structural harmony. Vineyard management aims for the maximum expression of the fruit through high planting density and low yields, providing the ideal basis for long ageing.

How it is produced

The process begins at the end of September with rigorous manual harvesting. Fermentation takes place in stainless steel vats with twenty days of maceration, ensuring optimal colour extraction and preserving aromatic purity. The wine then matures in oak barrels for thirty-six months, further developing its structure. A final ageing of twelve months is ultimately essential to reach the ideal gustatory balance.

Podere le Ripi started as a dream, and a very old one too: a dream to create something.

This dream is also an aesthetic one: of creating something extremely beautiful. When I was 18 years old it was supposed to be an island, and Podere le Ripi is not an island, but it is some sort of a peninsula that dives into the noisy Orcia river.

With time, this something beautiful became also healthy and sustainable, and subsequently we realized that it could have been applied somewhere else, therefore becoming replicable and socially positive in its approach.
