Trento Brut Magnum by Cesarini Sforza is a white sparkling wine from Trentino Alto Adige, crafted according to the principles of the Metodo Classico. Made from Chardonnay grapes, this wine fully expresses the elegance of the Trento appellation. In the glass, it shines with a bright gold colour, enhanced by a fine and persistent perlage. The sensory profile is fresh and well-defined, with a palate characterised by a pleasant creaminess and a lively acidity that unfolds towards a long and harmonious finish.
Provenance
The vineyards dedicated to this production are located between the Avisiane Hills, the Cembra Valley and Valsugana. The rows sit on well-exposed south and south-east facing slopes, at an altitude ranging between 350 and 700 metres. These conditions allow for a balanced ripening of the Chardonnay, keeping its freshness intact. The geology of the soils is varied: ranging from deep loamy-clay soils, rich in dolomitic rock, to well-draining calcareous and porphyritic soils. This pedological richness gives the wine an extraordinary aromatic purity, typical of the Trento area.
Production process
The grape harvest takes place between late August and early September. Initial fermentation takes place in stainless steel tanks to preserve primary aromas. The "prise de mousse" occurs through the secondary fermentation, the heart of the Metodo Classico, followed by slow ageing on the lees for a period ranging from twenty-four to thirty-six months. This evolution enriches the bouquet, combining notes of citrus and white flowers with hints of brioche and candyfloss, which lend complexity to the gustatory texture.
