How it is produced
After destemming, the grapes follow two distinct paths. One part undergoes cold maceration and ferments at a controlled temperature in stainless steel tanks. The other macerates on the skins for four days and completes fermentation in oak barrels, where it also undergoes malolactic fermentation. The components age separately for six months with weekly bâtonnage to provide greater structure. Finally, they are combined into a harmonious and dry final blend.
