Where it comes from
This oenological expression comes to life among the steep slopes of the municipalities of Ravello and Scala, in the heart of the famous Amalfi Coast. The vineyards are a clear example of heroic viticulture, cultivated on coastal terraces located between three hundred and four hundred metres above sea level. The south-west exposure ensures optimal sun ripening, while the soil composed of dolomitic-limestone rocks gives the wine a precise gustatory imprint and a structure with a strong identity.
How it is produced
Production begins at the end of October with the manual harvesting of the clusters. After destemming and crushing, the must undergoes alcoholic fermentation with a maceration on the skins of thirty days. The subsequent malolactic fermentation and twelve months of maturation take place in new French oak barrels, inside a cellar carved into the rock that ensures a humid and cool microclimate. A long final ageing of thirty-six months follows, essential for stabilising the wine's complex and deep aromatic structure.
