What type of wine it is
Prosecco Perlae Naonis Brut San Simone is a sparkling wine with a controlled designation of origin from Friuli-Venezia Giulia, produced from Glera grapes vinified in steel using the Charmat Method and suitable for those following a vegan lifestyle. In the glass, it shines with a straw yellow colour and greenish highlights, enhanced by a fine and persistent perlage. On the nose, hints of apple, pear, apricot, and citrus emerge, blending with delicate floral notes of wisteria and acacia. On the palate, the round and creamy texture finds an ideal balance with the Brut dosage, offering a soft sapidity and a clear glazed almond finish perfect for accompanying raw shellfish, spicy dishes, or local cured meats.
Where it comes from
The grapes are grown in the heart of Friuli-Venezia Giulia, between the municipalities of Pasiano, Porcia, and the alluvial plain of Azzano Decimo. The soils of the Prosecco area, rich in limestone and clay, give the wine a distinct freshness and a balanced sapidity. The vineyards, trained using the double Guyot system, allow for grapes with optimal aromatic ripeness. This sparkling wine celebrates the history of San Simone and represents a tribute to the ancient Friulian origins of Glera, a connection to the land that traces its roots back to Roman times, even mentioned in the writings of Pliny.
How it is produced
After the harvest and a gentle pressing, the must undergoes its first fermentation in steel tanks. The secondary fermentation takes place according to the Charmat Method, through a second fermentation in an autoclave for about a month at a controlled temperature. Subsequently, the wine is cooled to begin a natural refinement on the lees lasting three months. This period of resting at low temperatures is fundamental for defining the creaminess of the palate and harmonising the aromatic profile. The process concludes with isobaric bottling, an essential technique to preserve the original vibrancy and elegance of the grapes intact.

Later on handed over to our parents, Gino and Liviana convinced that to grow and improve we must always be open to change, which gave birth to a new production project: San Simone. An adventure that started from the historical Brisotto cellars, in Prata and later shifted to the new premises in Porcia, where the company accelerated its pace on the road to quality. This project aims to handle with care even a minimum detail, from the vineyard to the bottle.
