The Back to Basics wine by Santa Barbara is an organic white wine made from Verdicchio grapes, an authentic expression of the Marche region. Belonging to the renowned Verdicchio dei Castelli di Jesi denomination, it stands out for its slender, vibrant sensory profile and characteristic sweet almond finish. On the palate, it is savoury and structured, supported by elegant floral notes, fresh fruits, and distinct fermentative hints. Its genuine character is the result of vinification with indigenous yeasts and prolonged maceration on the skins, which enhance its deep complexity.

Where it comes from

This white wine originates from the hills of the municipality of Barbara, in the province of Ancona, within the Verdicchio dei Castelli di Jesi area. The vineyards are located at an altitude of approximately 250 metres above sea level, benefiting from a north-east and north-west exposure, essential for ensuring a perfect ripening balance of the grapes. The soils are distinguished by a unique composition that combines clayey layers with sandy and tufaceous veins. This specific pedoclimatic conformation gives the wine a marked mineral backbone and a pleasant savouriness, defining its identity in a clear and recognisable way.

How it is produced

The production process focuses on preserving the integrity of the raw material through direct and essential methods. Fermentation takes place at a controlled temperature using exclusively indigenous yeasts. During this phase, the must undergoes a long skin maceration, a key step for increasing structure and aromatic extraction. A period of ageing in steel tanks in close contact with the fine lees follows, lasting until the bottling phase. The renunciation of any racking and filtration practices allows the natural sediments to be maintained, giving the liquid its typical opalescence.

The name Santa Barbara pays homage to our land, our tradition and those we worship. The history of this place dates back to the 6th century when Senigallia was a Byzantine city and a Lombardic (and therefore "barbarian") outpost was
set up in a nearby village. Since then, that village took the name of Barbara which is where our winery is located today, having the privilege of being housed in an old monastery.

Our winery is located 25 km from the Adriatic Sea and is located on the hills that run between the Misa and Nevola rivers. Here a team of professionals works in the winery and vineyards every day, fuelled by passion, determination and a pinch of creativity so that our grapes maintain their beauty and express the quality of our land.
